Zucchini and Yellow Squash Gratin

List of Ingredients
- 2 Tbsp Butter
- 2 medium zucchini
- 2 medium yellow squash
- 2 shallots - minced
- coarse salt and ground pepper
- 1/2 cup heavy cream
- 1 cup panko
- 1/2 cup grated Parmesan Cheese
Instructions
- Preheat oven to 450
- In a large skillet melt butter over med heat. Add zucchini and yellow squash.
- Add shallots, garlic and season with salt and pepper.
- Cook, stir occasionally until zucchini and squash are crisp - tender (about 4 - 6 minutes)
- Add cream and cook until thick. (About 5 minutes) Remove skillet from heat and stir in 1/2 cup panko and 1/4 cup parmesan.
- Spoon the mixture into a shallow 2 qt baking dish. sprinkle with remaining panko and parmesan. Season with salt and pepper.
- Bake until top is golden brown - about 8 to 10 minutes.
