    Prep time 20 Minutes, Bake 10 Minutes - Total Time 30 minutes


    List of Ingredients


    • 2 Tbsp Butter
    • 2 medium zucchini
    • 2 medium yellow squash
    • 2 shallots - minced
    • coarse salt and ground pepper
    • 1/2 cup heavy cream
    • 1 cup panko
    • 1/2 cup grated Parmesan Cheese


    Instructions


    1. Preheat oven to 450
    2. In a large skillet melt butter over med heat. Add zucchini and yellow squash.
    3. Add shallots, garlic and season with salt and pepper.
    4. Cook, stir occasionally until zucchini and squash are crisp - tender (about 4 - 6 minutes)
    5. Add cream and cook until thick. (About 5 minutes) Remove skillet from heat and stir in 1/2 cup panko and 1/4 cup parmesan.
    6. Spoon the mixture into a shallow 2 qt baking dish. sprinkle with remaining panko and parmesan. Season with salt and pepper.
    7. Bake until top is golden brown - about 8 to 10 minutes.
