List of Ingredients
- 3 carrots chopped
- 4 stalks of celery chopped
- 4 cloves of garlic chopped
- 1 onion chopped
- 1 large eggplant chopped
- 1 cauliflower chopped
- 1 broccoli chopped
- 1 bunch of cilantro chopped
- 1 can garbonzos (1 cup cooked)
- 1 1/2 cups tomato sauce
- 2 cups vegetable stock
- 1/2 cup golden raisins
- 2 Tbsp Olive Oil
- 1 Tbsp cinnamon
- 1 Tbsp Cumin
- 1 Tbsp Curry
- 1 Tbsp Oregano
- Salt and pepper to taste
- Garnsih - Lemons and calamata olives
Instructions
- Saute the onions and garlic in olive oil for 3 minutes.
- Add the carrots, celery and other veggies (not cilantro) and saute for 5 minutes.
- Add tomato sacue and stock and bring to a nice boil.
- Add the the 4 spices
- Add the beans and raisins and heat through.
- Salt and pepper to taste.
- Finish by adding the cilantro.
- Place in bowls and add lemon slices and calamata olive slices to garnish.
