    List of Ingredients


    • 3 carrots chopped
    • 4 stalks of celery chopped
    • 4 cloves of garlic chopped
    • 1 onion chopped
    • 1 large eggplant chopped
    • 1 cauliflower chopped
    • 1 broccoli chopped
    • 1 bunch of cilantro chopped
    • 1 can garbonzos (1 cup cooked)
    • 1 1/2 cups tomato sauce
    • 2 cups vegetable stock
    • 1/2 cup golden raisins
    • 2 Tbsp Olive Oil
    • 1 Tbsp cinnamon
    • 1 Tbsp Cumin
    • 1 Tbsp Curry
    • 1 Tbsp Oregano
    • Salt and pepper to taste
    • Garnsih - Lemons and calamata olives


    Instructions


    1. Saute the onions and garlic in olive oil for 3 minutes.
    2. Add the carrots, celery and other veggies (not cilantro) and saute for 5 minutes.
    3. Add tomato sacue and stock and bring to a nice boil.
    4. Add the the 4 spices
    5. Add the beans and raisins and heat through.
    6. Salt and pepper to taste.
    7. Finish by adding the cilantro.
    8. Place in bowls and add lemon slices and calamata olive slices to garnish.
