    List of Ingredients


    • 4 stalks of celery - diced
    • 3 carrots - diced
    • 1 bunch leeks - diced
    • 4 cloves of garlic - chopped
    • 1 bunch kale - sliced thinly
    • 1/2 jar marinara sauce (Trader Joes or Newman's are both great)
    • 4 cups vegetable stock
    • 1 can (1 cup) cooked cannellini beans
    • 1 can (1 cup) cooked garbonzo beans
    • 2 Tbsp olive oil
    • Kosher salt and pepper to taste


    Instructions


    1. Saute the leeks and gaarlic in olive oil for a couple of minutes.
    2. Add carrots and celery and saute a few more minutes.
    3. Add stock, tomato sauce and beans.
    4. Bring to a boil and let simmer for 15 minutes.
    5. Add kale and turn off heat.
    6. Season with kosher salt and pepper.


    Final Comments


    You can serve with a dollop of pesto and/or a grate of sheese if desired.
