List of Ingredients
- 4 stalks of celery - diced
- 3 carrots - diced
- 1 bunch leeks - diced
- 4 cloves of garlic - chopped
- 1 bunch kale - sliced thinly
- 1/2 jar marinara sauce (Trader Joes or Newman's are both great)
- 4 cups vegetable stock
- 1 can (1 cup) cooked cannellini beans
- 1 can (1 cup) cooked garbonzo beans
- 2 Tbsp olive oil
- Kosher salt and pepper to taste
Instructions
- Saute the leeks and gaarlic in olive oil for a couple of minutes.
- Add carrots and celery and saute a few more minutes.
- Add stock, tomato sauce and beans.
- Bring to a boil and let simmer for 15 minutes.
- Add kale and turn off heat.
- Season with kosher salt and pepper.
Final Comments
You can serve with a dollop of pesto and/or a grate of sheese if desired.
