2 tbsp.Olive oil.
2 oz/55g.Butter.
4 oz/115g. Finely chopped onions.
1/4 tsp.Allspice.
2 Bay leaves.
Seeds from 3 cardamon pods.
2x1in.Cinnamon sticks.
4 Cloves.
1 tsp.Whole coriander.
1 tsp.Chilli powder.
2 Garlic cloves,crushed with 1 tsp.Salt.
1 tsp.Mustard seeds.
6 Black pepercorns.
1 tsp.Turmeric/
1/4 pt/150ml.Dry red wine.
2 tbsp.Apricot jam.Recipe
Heat oil & butter in large pan,add onion & fry until golden.Add remaining ingredients,except wine & jam.Cook on high heat for 5 minutes,stirring occasionally.Add wine & jam,simmer 5 minutes,stirring occasionally.Liquidise & pass through a coarse sieve.Add to recipes as needed.
*Freeze for upto 6 months.
