    Chichen Soup (Chinese Style)

    Serves:4 Calories per serving:About 60-65.

    List of Ingredients

    900ml/1 1/2pt.Chicken stock.
    100g/4oz.Chichen breats,cut into thin strips.
    2 Sticks of celery,finelt sliced.
    4 Dried Chinese mushrooms,soaked in water 20
    minutes,drained & sliced.
    1/4 Cucumber,cut into thin strips.
    1 Red chilli,chopped.
    2 tbsp.Soy sauce.
    1 tbsp.Red wine vinegar.
    2 Spring onions,finely chopped.

    Recipe

    Put chichen,stock,mushrooms & celery in a pan & bring to the boil.Reduce heat & simmer 5 minutes.Add remaining ingredients,except onion.Cook 1 minute.Sprinkle with onion.Serve immediately.
