    Vesuvius Tomatoes

    List of Ingredients


    • 2 T. plus 1/2 c. olive oil
    • 2 c. chopped onions
    • 12 large plum tomatoes, halved lengthwise
    • 3 large cloves of garlic, crushed
    • 1/2 t. salt
    • 1/4 t. sugar
    • 1/8 t. dried crushed red pepper
    • 12 fresh basil leaves (dried is fine)


    Instructions


    1. Preheat oven to 350 degrees.

    2. Heat 2 T. olive oil in heavy skillet over medium heat and saute onions until soft about 8 minutes.

    3. In a tupperware with a lid, mix together all the ingredients except the tomatoes, then add tomatoes & shake (gently) or mix all together to coat.

    4. Place all on a foil covered, large roasting pan. Try to heap the onion mixture on top of the tomatoes.

    5. Roast until tomatoes are tender but not falling apart, stirring about every 20 minutes to check on progress. About 1 hour 15 minutes?



    Final Comments


    You can also try setting the oven to 450 which is what I usually use for roasting vegetables, just check it more often.
