Vesuvius Tomatoes

List of Ingredients
- 2 T. plus 1/2 c. olive oil
- 2 c. chopped onions
- 12 large plum tomatoes, halved lengthwise
- 3 large cloves of garlic, crushed
- 1/2 t. salt
- 1/4 t. sugar
- 1/8 t. dried crushed red pepper
- 12 fresh basil leaves (dried is fine)
Instructions
- Preheat oven to 350 degrees.
- Heat 2 T. olive oil in heavy skillet over medium heat and saute onions until soft about 8 minutes.
- In a tupperware with a lid, mix together all the ingredients except the tomatoes, then add tomatoes & shake (gently) or mix all together to coat.
- Place all on a foil covered, large roasting pan. Try to heap the onion mixture on top of the tomatoes.
- Roast until tomatoes are tender but not falling apart, stirring about every 20 minutes to check on progress. About 1 hour 15 minutes?
Final Comments
You can also try setting the oven to 450 which is what I usually use for roasting vegetables, just check it more often.
