List of Ingredients
2 oz shredded colby/jack cheese
1 green onion with top
4 (6-7") flour tortillas
4 eggs
1/4 cup milk
1/8 tsp salt
dash pepper
1 tsp butter/margerine
1 TB real Bacon bits
1/4 cup thick and chunky salsa
Recipe
Shred Colby-Jack cheese.
On cutting board, cut root end off green onion, thinly slice with paring knife, and set aside.
In a large bowl, beat eggs with milk, salt, and pepper.
Melt butter in saute/fry pan, when butter starts to bubble, add egg mixture to pan. Let cook for 1 minute without stirring. Stir with spatula or spoon 3-4 minutes till egss are firm, stir in bacon bits, remove from heat.
For each burrito, spoon 1/3 cup of egg mixture down the center of tortilla. Top with 2 TB cheese, a few green onion slices, and 1 TB salsa. Fold sides over eggs. Serve with salsa.
