    Aunt Saunny

    1 cup cooked rice
    1 egg, slightly beaten
    1 tb milk
    1/2 cup grated medium cheese
    2 tsp mustard
    1/4 tsp salt
    dash paprika
    flour for dipping
    1 egg white, beaten
    1 tb additional milk
    fine bread or cracker crumbs

    Combine the rice, egg, milk, cheese, seasonings and blend thoroughly. Shape into marble size balls and dip in flour lightly. Then dip into the egg white beaten with the additional milk, then roll them in the bread crumbs. Fry in deep hot fat till golden, drain.
