SPAM Power Balls

Aunt Saunny

saute 1 small onion, finely chopped with 1/2 can smoked SPAM, finely chopped and 6 T butter
Add 1 10 oz pkg frozen chopped spinach - thawed & squeezed dry
1 C cornbread stuffing mix
1/2 c swiss cheese, finely grated
2 eggs
1/4 t. nutmeg

Mix all in food processor. Shape into 1" balls. Freeze.
Baked as needed on ungreased sheet pan 350 for 15 minutes.
Serve with sauce: 1/2 c mayo and 1 T horseradish
