    California-Style Layered Egg Salad

    8 hard-cooked eggs, peeled 8
    1/4 cup mayonnaise 50 mL
    1 tsp Dijon mustard 5 mL
    Salt and pepper, to taste
    2 cups chopped romaine lettuce 500 mL
    1 cup chopped red onion 250 mL
    1 avocado, peeled and diced 1
    1 tbsp fresh lemon juice 15 mL
    1/2 cup sour cream 125 mL
    8 oz cooked bacon pieces 250 g

    Chop eggs and place in bowl. Stir in mayonnaise, mustard, salt and pepper.
    Place lettuce in bottom of 8-cup (2 L) bowl. Top with egg mixture and red onion.
    Toss avocado with lemon juice and scatter over red onion. Spread sour cream over avocado and sprinkle with bacon.
    Suggestions & Tips
    Serve as a dip with crackers or pita breads, or as an appetizer salad.
