Cherry Coconut Bars

Crust:
1 cup all purpose flour
3 tbsp confectioners' sugar
1/2 cup cold butter
Filling:
2 eggs
1 cup sugar
1 tsp vanilla
1/4 cup all purpose flour
1/2 tsp baking powder
1/4 tsp salt
3/4 cup chopped walnuts
1/2 cup chopped marachino cherries
1/2 cup flaked coconut
Recipe
Heat oven to 350 F. Grease a 13 x 9 inch baking dish. In a bowl, combine the flour and confectioners' sugar. Cut in cold butter until crumbly. Press into prepared baking dish. Bake for 10-12 minutes or until lightly browned. Cool on a wire rack. For the filling, combine the eggs, sugar, and vanilla in a bowl. Combine flour, baking powder, and salt. Add to the egg mixture. Stir in the walnuts, cherries, and coconut. Spread over baked crust. Bake for an additional 20-25 minutes or until firm. Cool on a wire rack. Cut into bars. Yield: 3 dozen bars
