Cookie Cheesecake Bars

2 cups all purpose flour
1/2 cup packed brown sugar
3/4 cup butter or regular margarine, softened
1 1/2 cups coarsely crushed creme-filled chocolate
sandwich cookies
1 pkg (8 ounces) cream cheese, softened
3/4 cup granulated sugar
1/4 cup all purpose flour
2 eggs
24 miniature creme-filed chocolate sandwish cookies
Heat oven to 375 F. If you are using a dark or nonstick pan, heat oven to 325 F. Beat 2 cups flour, brown sugar, and butter in a large bowl using an electric mixer on medium speed or mix well using a wooden spoon. Press mixture in an ungreased 13 x 9 inch baking dish. Bake 15 to 20 minutes or until golden brown. Sprinkle with the crushed cookies. Beat cream cheese, granulated sugar, 1/4 cup flour, and eggs in a medium bowl using a electric mixer on medium speed or mix well using a wooden spoon. Mix until thick and fluffy. Pour over crushed cookies. Bake 12 to 16 minutes or until topping is set. Cool for 15 minutes. Refrigerate at least 1 hour until firm. *** Here I lightly cut into the bars so I can center the cookie. For bars, cut into 6 rows by 4 rows. Top each bar with a minature cookie. Store covered in refrigerator. Yield: 24 bars.
