Dromedary Date Bars

3/4 cup flour
1/2 tsp. baking powder
1/2 tsp. salt
1 cup Dromedary dates, chopped
1 cup shredded coconut OR 1/2 cup chopped nuts
2 whole eggs
1 cup packed brown sugar
Preheat the oven to 350º F.
In a large mixing bowl, sift the flour, baking powder and salt.
Mix in the dates, coconut or nuts.
In a separate bowl, beat eggs until foamy, gradually beating in the
brown sugar.
Add to the flour mixture and mix well.
Spread batter in a well greased 9" x 13" baking pan to a depth of
approximately 1 inch.
Place pan in the oven and bake for 30 to 40 minutes.
Cut into 4" x 1" bars. Remove from pan while still warm.
Makes: about 20 bars.
