    List of Ingredients

    * 2 cups flour
    * ½ cup sugar
    * 1/8 tsp salt
    * ½ cup margarine
    * 2 tbsps flour
    * 1 tsp baking powder
    * ¼ tsp salt
    * 3 eggs
    * 2 cups sugar
    * 1/3 cup lemon juice
    * 2 cups fresh or frozen cranberries
    * 2 cups shredded sweet coconut



    Instructions

    1. Stir together 2 cups flour, ½ cup sugar and 1/8 tsp salt.

    2. With 2 knives, cut in until crumbly margarine. Evenly press
    into
    bottom of greased 9 x 13-inch pan.

    3. Bake at 350F until golden, about 20 minutes.

    4. Meanwhile in a small bowl, using a fork, stir together 2 tbsp
    flour,
    1 tsp baking powder, ¼ tsp salt.

    5. In a large bowl, whisk together 3 eggs, 2 cups sugar, 1/3 cup
    lemon
    juice.

    6. Whisk in flour mixture until blended. Stir in cranberries and
    coconut.

    7. Pour over hot baked crust. Reduce heat to 325F. Bake until
    centre is
    set and edges are golden about 45 to 50 minutes.
