    2 cups flour
    2 tsp. baking powder
    1 tsp. baking soda
    2 tsp. cinnamon
    ¼ tsp. salt
    4 eggs
    1 (15oz.) can pumpkin
    1-2/3 cup sugar
    1 cup vegetable or canola oil
    1 cup pecans, chopped (optional)

    For the frosting:

    2 (3 oz.) pkg. cream cheese, softened
    1 stick butter, softened (½ cup)
    2 tsp. vanilla
    3 cups powdered sugar
    24 whole pecans for garnish (optional)


    Recipe



    Combine the flour, baking powder, baking soda, salt and cinnamon. Set aside. In a large bowl beat together the eggs, pumpkin, sugar and oil. Add the dry ingredients to the pumpkin mixture, beating well. Add the chopped pecans (if desired). Spread the mixture in a 15 x 10 x 1 inch greased baking pan. Bake in a 350º oven for 25-30 minutes until golden brown or until the toothpick inserted in the center comes out clean. Cool completely before frosting.

    Combine first three frosting ingredients and gradually add the powdered sugar until smooth - spreading consistency. (You can use between 3 and 4 cups of powdered sugar.) Spread the frosting on the cooled cake. Cut into bars and garnish each with a whole (shelled)pecan.
    Store in the refrigerator.
