Sour Cream Raisin Bars

2 C. raisins
1 1/2 C. water
1 1/2 C. flour
1 1/2 C. old-fashioned rolled oats
1 C. firmly packed brown sugar
3/4 C. butter, softened
1 tsp. baking soda
Filling:
1 C. sugar
1 1/2 C. sour cream
3 egg yolks
3 T. cornstarch
Preheat oven to 350 degrees F.
In 2 quart saucepan, cook raisins in water over medium heat until
raisins are soft and plump (10-12 minutes). Drain; cool. Set aside. In large mixer bowl, combine flour, oats, brown sugar, butter and baking soda. Beat at medium speed, scraping bowl often, until crumbly (1-2 minutes). Press 3 C. crumb mixture on bottom of ungreased 9 X 13 pan. In
2-quart saucepan, combine filling ingredients. Cook over low heat, stirring occasionally, until mixture comes to a boil (15-20 minutes). Boil 1 minute. Remove from heat; stir in raisins. Spread over crumb crust. Sprinkle with remaining crumb mixture. Bake for 25-35 minutes or
until lightly browned. Cool completely before cutting into bars. Makes 3 dozen bars.
