    Fiesta meatballs

    Aunt Saunny

    1 lb. ground beef
    1 egg, beaten
    1/2 cup soft bread crumbs
    1 tsp. salt
    5 tbsp. margarine, divided
    1 cup sliced onion
    1 cup sliced canned mushrooms, drained
    1 (6 oz.) pkg. spanish rice
    2 1/4 cups tomato juice
    1 tsp. oregano
    1 cup (4 oz.) shredded cheddar cheese
    1/2 cup chopped green pepper

    In a bowl mix beef, egg, bread crumbs, and salt. Shape into 18- 1 1/2
    inch balls. Lightly brown meatballs in 1 tablespoon of the butter,
    and remove. Add remaining 4 tablespoons of butter and onions to pan
    and saute until they begin to soften. Add mushrooms and saute until
    tender. Stir in tomato juice, rice and oregano. Return meatballs to
    skillet and cover. Cook over low heat 40 minutes. Top with cheese and
    green pepper and cover. Cook 10 more minutes or until most of liquid
    is absorbed.
