    Hamburger-Cabbage Casserole

    Aunt Saunny

    1 pound lean ground beef
    1 large onion -- chopped (1 cup)
    1/2 cup uncooked instant rice
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1 (10 3/4-ounce) can condensed tomato soup
    1/4 cup water
    4 cups coleslaw mix
    OR
    4 cups shredded cabbage

    Heat oven to 400F.

    Cook beef and onion in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in remaining ingredients. Spoon into ungreased 2-quart casserole. Cover and bake 45 minutes or until hot and bubbly. Serves 6.
