Creamed Chipped Beef

1/4 lb. dried beef
2 T minced onion
1 4oz can mushrooms
1/4 cup butter
3 T flour
1 cup milk
1 cup shredded cheddar cheese
1 tsp. salt
1/8 tsp. pepper
1 cup sour cream
Cut dried beef in strips. Saute beef, onion and drained mushrooms in butter.Cook over low heat until onions are transparent. Blend in flour. Add milk,stirring constantly. Cook until sauce is thick and smooth. Add cheese, sour
cream, salt and pepper. Heat to serving temperature. Serve in popovers, on buttered toast triangles, toasted English muffins, rice or buttered noodles.Garnish with additional cheese, if desired. Serves 5-6.
