PEPPERED ROAST WITH RED ONION

1 rib roast
3 tbs. crushed mixed peppercorns
1 tbs. olive oil
3 chopped red onions
3 tbs. Dijon mustard
1 tsp. rosemary
HEAT OVEN TO 350 DEGREES. Place roast on rack set in roasting pan. Roast 1 hour. Combine peppercorns, oil, red onion, mustard, and rosemary, spread on
roast. Cook 50 min. more or until done. Let sit 10 min. Place on serving platter. GARNISH WITH ORANGE AND KIWI SLICES AND CHERRY TOMATOES. Makes 12 servings.*
