Rib roast: 1
Italian bread crumbs and chopped rosemary: 1 tbs. each
Ground pepper melange: 1 1/2 tsp.
Salt: 1 tsp.
Dijon mustard: 2 tbs.
Red onion: 2 cut into wedges
Flour: 1 tbs.
Bourbon whiskey: 3 tbs.
Beef broth: 14.5 oz can
HEAT OVEN TO 350 DEGREES. Place roast in roasting pan, roast beef 1 hour. In bowl, combine next 4 ingredients, brush mustard over roast. Sprinkle with bread crumb mixture. Add onions to pan. Cook 50 min. more. Remove to
serving platter, let sit 15 min. Drain and discard all but 1 tbs. fat. Stir in flour cook 1 min. Add bourbon and cook 1 min. more, add broth cook 1 min. more. Simmer 4 min. or until thickened.*
