    Stuffed Steak with Hot Pepper Sauce

    Aunt Saunny

    2 pounds sirloin steak, trimmed and cut into 1/2-1/4 inch thickness
    1 medium white/yellow onion, chopped
    4 tablespoons butter
    2 tablespoons steak sauce
    1 pound fresh mushrooms, cleaned and sliced
    1/4 cup fresh parsley, cleaned and chopped
    1/2 cup dry white wine (NOT cooking wine)
    1 teaspoon garlic powder OR 3 good cloves fresh garlic, crushed
    and/or diced/chopped
    1 teaspoon salt
    1-2 teaspoons freshly cracked pepper


    Pound steak with mallet until tenderized...set aside...
    Saute mushrooms, onions and parsley in butter until onion begins to
    soften...
    Stir in steak sauce, wine and seasonings...
    Simmer uncovered until wine is reduced about by half...stirring
    often...
    Lay steak flat and spread mushroom mixture over it evenly...
    Roll up (jelly-roll-style) steak along longest edge and secure with
    toothpicks or tie with kitchen-twine (soaked first in water)...
    Sprinkle with additional salt and pepper IF DESIRED...
    Broil until desired doneness, turning once...
    Cut into four servings...
