2 pounds fresh peaches
3 cups 80 proof vodka
1 cup water
1 teaspoon whole cloves
1 teaspoon cinnamon
1 teaspoon whole coriander
1 teaspoon nutmeg
1 cup green peach leaves * see note
2 cups granulated sugar
NOTE Yes, indeed. Use leaves from any peach tree. Although peach leaves aren’t available in your average commissary, a little searching through your neighborhood will probably turn up at least one peach tree and a congenial owner who will let you pick a cup of leaves.
Peal peaches, cut out any dark spots. Make about 19 cuts in each peach cutting down to the pit in order for the alcohol to reach through the entire fruit. Place in a glass or glazed ceramic container. Add vodka, water, spices and carefully washed peach leaves. Cover and let stand at room temperature for 2 weeks. Strain through a fine sieve. Discard all residue. Add sugar and stir until sugar is dissolved. Cover and leave to clear. This will take about a week to 10 days. Carefully pour into bottles and cap.
