    6 fresh pears or 12 dried pears
    1 orange
    3 cups 80 proof vodka
    1 cup water
    6 whole cloves
    1 teaspoon whole coriander
    1 teaspoon cinnamon
    4 cups granulated sugar

    Peal, remove seeds and dice fresh pears: dice dried pears. Peal orange making sure to remove all the pith: section and cut each section in half. Put all ingredients except sugar in a large mixing container and stir. Cover and leave to infuse for 2 weeks. Strain through a fine sieve, discarding residue. Put liquid into mixing container; add sugar and stir until sugar is dissolved. Leave to clear, which will take about 2 week. If the color seems to light add a drop or two of yellow food coloring. Bottle
    Yield 1 quart
