    Cheddar Cheese Bread

    7 1/2 to 8 1/2 c. flour
    1/3 c. sugar
    1 T. salt
    2 pkgs. yeast
    1 c. water
    1 c. cottage cheese
    3 c. grated cheddar cheese
    2 eggs
    1 2/3 c. milk
    1/4 c. butter

    In bowl mix 2 1/2 c. flour, sugar, salt and dry yeast. Combine water, milk, butter and heat to 120-130°. Stir in cottage cheese. Add to dry ingredients, beat for 2 minutes at a medium speed. Add cheddar, eggs, and 1/2 c. flour, beat for 2 minutes at a high speed. Stir in additional flour to make dough stiff. Turn out on floured board, knead 8 to 10 minutes or until smooth and elastic. Place in greased bowl, turning to grease top. Cover and let rise for 1 hour or until doubled. Punch down and turn out on board, cover and let rest for 15 minutes. Divide in half and shape into loaves. Let rise 1 hour or until doubled in size. Bake for 40 minutes at 375°, grease top with butter.
