Whole Wheat Banana Bread

1 1/4 cups flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
1/4 cup Puritan Oil
1 egg
1 cup mashed ripe banana (about 2 medium).
1 teaspoon vanilla extract
Vegetable cooking spray
Combine first 4 ingredients in a small bowl;
stir well and set aside.
Combine sugar and Puritan Oil in a medium mixing bowl;
beat at medium speed with an electric mixer 2 minutes
or until well blended. Add egg; beat until light and
lemon-colored.
With mixer running at low speed, add flour mixture
alternately with banana, beginning and ending with
flour mixture. Blend well after each addition. Stir
in Vanilla.
Pour batter into an 8x4x2 inch loaf pan coated with
cooking spray; bake at 350 degrees for 45 minutes.
Cool 15 minutes in pan on a wire rack; remove from
pan, and let cool completely on a wire rack. Yields
16 servings and is, about 120 calories per 1/2 inch
slice.
