Egg and Canadian Bacon Casserole

1 package crescent rolls
8 slices Canadian bacon
2 cups Swiss cheese, shredded
8 eggs
2/3 cup cream
Spread out crescent rolls on the bottom of a greased 13 x 9 inch baking dish. Place Canadian bacon over crescent rolls, followed by 1 cup of the Swiss cheese. Carefully drop eggs one at a time onto cheese and bacon layer. Be careful not to break yolks. Pour cream over eggs and sprinkle with the remaining cup of cheese. Bake at 400 degrees for 25 minutes. Slice into squares and serve. You will be surprised at how good this recipe turns out. The eggs cook right on top of the bacon and make for a dish that is both delicious and attractive. This casserole is very different from your run of the mill scrambled egg and sausage dishes. The Skinny: Canadian bacon generally has less fat than regular bacon and you can substitute evaporated milk for the cream. However, you really need regular cheese for the gooey factor.
