Serves: 3-4
1 lb. frozen link saugages - cut in 1/4" pieces
1 lg. russet potato - peeled and diced
1 sm. onion - minced
6 eggs - beaten
salt and pepper - to taste
-Heat a large skillet on high, add saugage, cook until it renders the grease.
-Add potatoes and onions, cook until potatoes are tender and browned.
-Add eggs to skillet and mix well.
-Cook until eggs are scrambled, season to taste with salt and pepper.
