SNOWY DAY BREAKFAST CASSEROLE

3 Potatoes,Shredded
½ Onion,Chopped
¼ c Green Bell Peppers,Chopped
4 slices Low Sodium Bacon
1 c Egg Substitute
¼ c Cheddar Cheese,Shredded
Fry bacon in a large skillet.
Drain.
Add potatoes, onions and peppers and sauté until potatoes are crispy
and onion soft.
Stir in crumbled bacon.
Transfer to greased 8 inch square baking dish.
Pour egg substitute over.
Sprinkle with cheese.
Bake at 350º until eggs are set, about 20 minutes.
