Sausage-Scramble Pie

4 sandwich bread slices, cut into 1-inch cubes
1 (16-ounce) package ground pork sausage, cooked and crumbled
2 cups (8 ounces) shredded mild Cheddar cheese, divided
1 3/4 cups milk
4 large eggs
3/4 teaspoon dry mustard
1 (10 3/4-ounce) can cream of celery soup, undiluted
1/3 cup sliced green onions (optional)
Place bread in a lightly greased 11 X 7-inch baking dish. Top with sausage and half of cheese. Stir together 1 1/4 cups milk, eggs, and dry mustard; pour evenly over bread mixture. Stir together remaining 1/2 cup milk and soup; pour over casserole. Bake at 350 degrees for 1 hour. Top with remaining cheese and, if desired, green onions; bake 5 more minutes or until cheese is melted.
