    Aunt Saunny

    2 tspn. butter
    1 large egg, slightly beaten
    1 English muffin, split and toasted
    1 (1-ounce) cooked ham slice
    1 (3/4 -ounce) process American cheese slice

    Melt butter in a small nonstick skillet over medium heat; add beaten egg. Cook, without stirring, until egg begins to set on bottom. Draw a spatula across bottom of skillet to form large curds. Continue cooking until egg is thickened but still moist ( do not stir constantly). Fold over to fit on muffin. Remove egg from heat, and place on bottom half of muffin; top with ham and cheese. Cover with muffin top.
