Tumbleweed Pie

16 ounces pork sausage
1 bunch sliced green onions
2 cloves minced garlic
1 teaspoon salt
1/4 teaspoon ground black pepper
26 ounces frozen hash browns - thawed
4 large eggs
1 1/2 cups milk
2 cups shredded sharp cheddar cheese
chopped tomato
Cook first 5 ingredients in a 12-inch ovenproof skillet over
medium-high
heat, stirring occasionally, 6 minutes or until sausage is browned;
drain and
return to skillet.
Add hash browns to skillet, and cook over medium-high heat 2 to 3
minutes.
Whisk together eggs, milk, and 1 cup cheese; pour over sausage mixture
in
skillet.
Sprinkle with remaining 1 cup cheese. Wrap handle of skillet with
aluminum
foil. Bake at 450 degrees F. for 15 to 20 minutes or until set.
Garnish, if desired, with chopped tomato.
