Groundhog day buttermilk pancakes

1 cup all-purpose flour
1 teaspoon sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 1/3 cups low-fat buttermilk
1 tablespoon stick margarine or butter, melted
1 large egg white
cooking spray
1/2 cup maple syrup
1. Lightly spoon flour into a dry measuring cup; level with a knife.
Combine flour and next 4 ingredients (flour through salt). Combine
buttermilk, margarine, and egg white. Add to flour mixture, stirring
until smooth.
2. Spoon about 1/4 cup pancake batter onto a hot nonstick griddle or
nonstick skillet coated with cooking spray. Turn pancakes when tops
are covered with bubbles and edges look cooked (about 2 minutes).
Serve with maple syrup. Yield: 4 servings (serving size: 3 pancakes
and 2 tablespoons syrup).
