Orange Pancakes

Serves 4
1 15-ounce container part-skim ricotta cheese
1/3 cup sugar
2large eggs
2 teaspoons grated orange zest
2/3cup all-purpose flour
3 tablespoons canola oil, plus more if needed
Maple syrup, for serving (optional)
Confectioners’ sugar, for serving (optional)
1. In a medium bowl, whisk together cheese, sugar, eggs, and zest. Gradually whisk in flour, until just combined.
2. Heat oil in a large nonstick skillet over medium-low heat. Working in batches, drop batter into skillet by scant 1/4 cups. Cook until brown and cooked through, 4 to 5 minutes per side. Transfer to a paper towel–lined plate when cooked; add more oil to skillet for remaining batches, if necessary.
Serve hot, with maple syrup, or dusted with confectioners’ sugar.
