Cranberry Coffee Cake

List of Ingredients

* 1 apple, finely chopped
* 1 cup cranberries, coarsely chopped
* 1 tsp finely grated orange or lemon peel
* 2 cups flour
* 3/4 cup sugar
* 2 tsps cinnamon
* 1 tsp baking powder
* ½ tsp baking soda
* ½ tsp salt
* 1 egg
* 3/4 cup buttermilk
* ¼ cup margarine, melted
* ¼ tsp almond or 1 tsp vanilla extract
* 2 tbsps sugar
* 2 tbsps brown sugar



Instructions

1. Combine apple, cranberries, peel and set aside.
2. In a large bowl, using a fork, stir together next 6
ingredients. Make
a well in centre.
3. In another bowl, whisk together next 4 ingredients.
4. Pour into flour mixture and stir just until evenly mixed. Then
stir
in fruit.
5. Spoon into prepared pan and smooth top.
6. Stir together sugars and sprinkle over cake.
7. Bake in a greased 9-inch springform or deep cake pan at 350F
for 55
to 60 minutes. Cool for 10 minutes
