Corncob Syrup

6 med. corncobs, kernels scraped off, cobs
broken into chunks
1 1/4 c. packed dark brown sugar
Place cobs and 4 cups of water in a large saucepan; bring to a boil. Cook briskly over med-high heat for 30-45 min, until liquid is reduced to about 2 c. Remove cobs with slotted spoon or wire strainer; discard. Add sugar; bring
to a boil again, stirring to make sure sugar dissolves. Reduce heat to maintain a brisk simmer without boiling over. Cook until liquid is reduced to about 1 cup and has the consistency of maple syrup, 10 - 20 min. Use right away or cool and store in the refrigerator.
