    Ingredients
    8 thick (1/2-inch/1.5 cm) slices French bread, preferably stale 8
    4 oz cream cheese, softened 125 g
    1/2 cup raspberry jam 125 mL
    4 eggs 4
    1/2 cup milk 125 mL
    1/2 tsp vanilla 2 mL
    1 tbsp vegetable oil 15 mL

    Directions

    Spread cream cheese evenly on four slices of bread. Spread jam over cheese. Top with remaining slices of bread.

    Beat together eggs, milk and vanilla in shallow dish just large enough to hold the four sandwiches. Place sandwiches in dish and soak each side with egg mixture.

    In nonstick skillet over medium-low heat, heat oil. Cook sandwiches until golden brown, 2-1/2 to 3 minutes per side.

    Sprinkle with icing sugar and serve.

    Suggestions & Tips

    Serve with mandarin oranges and milk.

    Variations

    Ham and Cheese Toast: Substitute one slice cooked ham and a few thin slices of Swiss cheese for the cream cheese and jam.
