Cajun Casserole

2 Cups Uncooked White Rice
1 Cup Cooked Ham, diced
1 Medium Spanish Onion, chopped finely
1 Medium Green Pepper, chopped finely
1/2 Cup Celery, chopped finely
1 Quart Tomato Juice
2 Tablespoons Salt
1/2 Lb. Grated Cheddar Cheese
1/4 Teaspoon Garlic Powder
1 Teaspoon Hot Pepper Sauce
1/4 Teaspoon Black Pepper
3 Tablespoons Butter
In a large frying pan, melt the butter over low heat.
Add the Spanish Onion and the Green Pepper to the pan and sauté for 2 to 3 minutes.
Add the Salt, Black Pepper, Garlic Powder, Hot Pepper Sauce, Ham and the grated
Cheddar Cheese to the pan and stir until the cheese is melted.
Add the Tomato Juice to the pan and simmer for an additional 2 to 3 minutes
Wash and drain the rice. Lightly grease a large casserole dish with butter
and put the rice in it. Stir in the sauce, cover and bake in a pre-heated 350-degree
oven for approximately 1 hour. Uncover the casserole and bake for an additional 15 minutes.
