    Shrimp Creole

    Aunt Saunny
    Saute 1 chopped onion,
    1 chopped green pepper,
    1 chopped stalk of celery in butter until glassy.

    Add 1 can diced tomatoes,
    1 crumbled bay leaf,
    a little tomato paste,
    1/2 tsp (or less)cayenne pepper,
    a little water and a
    minced clove of garlic.

    Simmer 15 mins.
    Add 1/2 cup white wine,
    2-3 cups shrimp and cook 5 mins. Serve over rice.
