    Ingredients
    a.. 10 ½ oz All-purpose flour (2-2/3 cups)
    b.. Baking powder - 1 tablespoon + 1 teaspoon
    c.. Sugar - 1 tablespoon + 1 teaspoon
    d.. Salt - 1 tablespoon + 1 teaspoon
    e.. 4 Eggs, separated
    f.. 1 Cup Milk
    g.. ½ Tbsp Lemon zest
    h.. ½ Tbsp Chopped fresh thyme
    i.. 6 Garlic cloves, chopped finely
    j.. 1/8 tsp Cayenne pepper
    k.. 2 Pounds California Avocados, 1/4-inch dice
    l.. Creole Mustard-Apricot Sauce - Recipe follows

    Instructions
    1.. METHOD
    2.. Mix dry ingredients; reserve.
    3.. Beat egg yolks until light; whisk in milk and next 4
    ingredients.
    4.. Stir in dry ingredients until just mixed; if batter is too
    thick, thin with additional milk. Let batter rest in the refrigerator
    at least 2 hours or overnight.
    5.. Gently fold in avocado; reserve.
    6.. Whip egg whites until stiff; fold into avocado mixture.
    7.. PER ORDER
    8.. Drop 3 generous spoonfuls of batter, one at a time, into
    375°F oil; cook until golden brown, about 2 minutes. Serve with 1/4 cup
    Creole Mustard-Apricot Sauce on the side.
    9.. Creole Mustard-Apricot Sauce
    10.. Mix 1-3/4 cups apricot jam, 1 cup Creole mustard and 1/4
    cup water until well blended; reserve. Yield: 3 Cups.
