Cajun Gravy

2 tablespoons butter
1/3 cup flour
2 cups milk
1 tablespoon hot sauce
1/2 teaspoon salt
1/4 teaspoon pepper, red and black
Melt butter; stir in flour until smooth. Add milk and beat until lumps are gone. Add seasonings. After gravy is completed, add sautéed mushrooms and onions, if desired. You can also add cooked pork chops or whatever else is desired. Simmer about 10 minutes.
