Cajun Mashed Potatoes

a.. 4 russet potatoes, peeled and cut into 1 inch pieces
b.. 2 Tbs. unsalted butter
c.. 1/4 cup milk
d.. 1 tsp. sugar
e.. 1/2 cup bottled roasted red bell peppers, drained and sliced
f.. 1/2 tsp. Cajun spice mix
g.. 1 Tbs. fresh thyme, chopped
Place potatoes in a steamer basket over boiling water. Cover pan and
steam 10-12 minutes or until tender. Drain. Mash well with a potato
masher or fork, or push potato through a sieve. Add remaining ingredients
and beat until butter is melted.
