Carrot Cake

3 cups flour
2 cups sugar
2 tsp. baking powder
1 tsp. soda
2 tsp. cinnamon
1 tsp. salt
1-1/4 cup of oil
4 eggs
2 tsp. vanilla
2 cups grated carrot
1 - 20 oz. can crushed pineapple, drained
1 cup chopped pecans
1 cup raisins (white)
Mix ingredients in order given. Pour into two greased and floured 9-inch round pans. Bake at 350 degrees for 45-50 minutes. Let cool. Ice with Cream Cheese icing.
Icing
11 oz. cream cheese at room temperature
1/4 cup butter, softened
2-1/4 cups confectioners sugar
2 tsp. vanilla
1/2 tsp. salt
Cream frosting ingredients and frost cake layers.
