    Pineapple Cake

    Aunt Saunny

    2 1/4 cups flour
    2 cups granulated sugar
    1 20-oz. can crushed pineapple with juice
    2 eggs
    2 tsp. baking soda
    1/4 cup vegetable oil
    1 cup chopped walnuts
    1 tsp. vanilla

    Preheat oven to 350 degrees F. Mix all ingredients together in a mixing bowl and turn into a greased and floured 9x13 inch baking pan. Bake for 40-50 minutes or until cake tester comes out clean.

    Icing:
    1 8-oz. package cream cheese
    1/2 cup butter, softened
    1 1/2 cups powdered sugar
    1 tsp. vanilla

    Blend together with an electric mixer until smooth. Spread over cooled cake.
