Caramel Apple 9 X 13 cake

1 package (18.25oz) Duncan Hines Spice Cake mix
3 large eggs
1 & 1/3 cup water
1/3 cup oil
1 tablespoon cinnamon
1 & 1/2 to 2 cups of apples, peeled and chopped
into small pieces.
Heat oven to 350. Grease and flour a large cookie baking pan, 17-1/2 x 12 inches. Combine water, eggs & oil in a large mixing bowl. Beat on low and then add cinnamon & cake mix. Beat on medium speed for about two minutes. Fold in apples and pour into prepared 9 X 13 pan & bake for about 20 minutes or until firm in the center & tests done. Allow to cool for about ten minutes and then spread HOT caramel frosting over the
cake.
Caramel Frosting
1/2 cup (1 stick) butter, melted
1 cup brown sugar
1/4 cup maple syrup
1/3 cup evaporated milk
1 teaspoon vanilla
2 cups powdered sugar
Melt the butter in a medium size sauce pan, stir in the brown sugar and mix until desolved. Bring to a boil and cook stirring constantly for about 2 minutes. Add milk, maple syrup & vanilla, returning to a boil.Remove from heat & stir in the powdered sugar. Immediatley pour on cake and spread quickly before it gets firm. Server warm or at room tempature.
