Cashew brittle

1 c. sugar
1/2 c. white corn syrup
1 1/2 c. dry roasted cashews
1 tsp. vanilla
1/2 - 1 c. shredded coconut
1 stick butter
1 tsp. baking soda
Combine sugar and corn syrup in a medium-size, microwave safe mixing
bowl (I use a 10 cup measuring bowl with a handle) and microwave on
high for 3 to 5 minutes. Then add butter, vanilla, cashews and
coconut, gently stirring the contents together, and microwave on high
for 1 to 2 minutes. Add baking soda and mix until blended. Quickly
spread on greased cookie sheet and let it sit for 30 to 40 minutes.
When hardened, break into pieces.
