POTATO CANDY

4 lbs. confectioners sugar
4 lbs. potatoes
2 tsp. vanilla
Dash of salt
Peanut butter
Boil, drain and mash the potatoes. Add sugar, salt,
and vanilla. Mix together to form a dough. Separate
into four parts. Roll each out like a pie crust and
spread with peanut butter. Start at one edge and roll
into a log. Refrigerate 2 hours. Slice and serve or
freeze. This is great, lasts indefinitely, and is easy
to mail as gifts.
