Onion & Hot Pepper Relish

1 quart onions, chopped
2 cups chopped bell pepper
2 cups chopped hot peppers (see note)
1 cup sugar
1 quart vinegar
4 tsp. salt
1 cup chopped cabbage
Combine all ingredients and bring to a boil. Cook until slightly
thickened. Pour into hot sterile jars. Fill jars to within 1/2" of the top.
Seal. Process using hot water bath method. Makes 3 to 4 pints.
Note: Use whatever type of hot peppers to achieve the heat level you
prefer in the relish.
