PEACH SALSA

6 cups diced peaches
1 1/4 cups chopped red onion
4 jalapeno peppers chopped
1 chopped red bell pepper
1/2 cup chopped fresh cilantro
1/2 cup white vinegar
2 TBSP honey
3 cloves minced garlic
2 tsp. cumin
1/2 tsp. cayenne pepper
Simmer all ingredients for 5 minutes. Pack into hot jars and process
in a HWB for 10 minutes.
To make it a little spicer .... leave in some of the ribs and seeds of
the jalapenos. Makes 8 pints
