Tomato Relish

Mix together in a large glass or plastic bowl:
4 quarts diced tomatoes
2 cups chopped Onions
1 cup chopped Bell peppers
1/3 cup chopped Hot peppers
1/4 cup salt
Let sit overnight in fridge in a covered bowl.
The next day, drain and discard liquid.
Add:
1 1/2 cups sugar
1/2 cup dark brown sugar
1 cup white vinegar
1 & 1/2 Tbsp. ground black pepper
1 & 1/2 Tbsp. pickling spice (tied in cloth). I could not find the
pickling spice so I used 1 1/2 Tbsp. Bread and Butter pickle mix that I
found at Wal Mart. Just as good to me and alot easier to use.
Bring to a boil, reduce heat and simmer 15 minutes. Remove pickling spice bundle. Put relish in jars and seal.
YIELDS 8 PINTS. GOOD WITH PEAS, BEANS OR AS A DIP.
